fried corn is one of the best things ever. the scent when it caramelises is just so good.
I like to do it tempura style, or in a salad:
cooked or par cooked corn, either from a can or the cob (todays was cooked on the cob a few nights ago), cooked in bacon grease. add seasoning (paprika goes hard) and some fresh coriander. it’s fucking delicious. I used to make that salad when I did my hotdog and jazz birthday parties in my twenties.
of course the bacon isn’t essential if you have guests who don’t eat it. it does add a lovely dimension to the flavour, though.
today I sliced the corn cob so that I had stiff sides to cook, but whatever was holding them together melted, making it all individualise. which is kind of fascinating.
at nandos and other burger places you can get corn sides (I don’t know what they call them), I’m wondering if you have to cut them wile raw or whether they chop off some of the centre to keep it together
