There are a lot of great savory flavors in these Pulled BBQ Chicken Toasts with Smoky Corn Bacon. They have soft pulled chicken covered in tangy BBQ sauce, crispy bacon, charred corn, and fresh toppings, all on top of golden toasted bread slices.
Ingredients: 2 cups cooked shredded chicken. 1 cup BBQ sauce. 4 slices bread. 1 cup corn kernels. 4 slices bacon. 1/2 cup shredded cheese. 1/4 cup diced red onion. 1/4 cup chopped cilantro. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. In a bowl, mix shredded chicken with BBQ sauce until well coated. Set aside. Place bacon slices on a baking sheet and bake in the preheated oven for 10-12 minutes or until crispy. Remove and chop into small pieces. In a skillet, cook corn kernels until lightly charred and smoky. Toast bread slices until golden brown. Spread BBQ chicken mixture evenly on each toast slice. Top with shredded cheese, chopped bacon, charred corn, diced red onion, and chopped cilantro. Season with salt and pepper to taste. Serve immediately and enjoy!
