This spicy summer corn dip is a hit with everyone. It tastes great with fresh corn, hot jalapeos, and creamy cheese. It's a great starter for summer parties, barbecues, and picnics.
Ingredients: 2 cups corn kernels fresh or frozen. 1 red bell pepper, diced. 1 jalapeo pepper, minced. 1/2 cup mayonnaise. 1/2 cup sour cream. 1 cup shredded cheddar cheese. 1/4 cup chopped fresh cilantro. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. Salt and pepper to taste.
Instructions: Preheat oven to 350F 175C. In a mixing bowl, combine corn, red bell pepper, jalapeo, mayonnaise, sour cream, cheddar cheese, cilantro, chili powder, and garlic powder. Season with salt and pepper. Transfer the mixture to a baking dish and spread it out evenly. Bake for 20-25 minutes, until bubbly and golden brown on top. Serve warm with tortilla chips or sliced vegetables.
