HAUNTING Habanero-Mango Fermented Hot Sauce
1. in a well-cleaned jar, mix up:
- 2 tbsp salt
- 2 tbsp sugar
- a couple inches of water
till dissolved.
2. throw in:
- some peppercorns
- 15-20 habaneros, seeded
- 2 mangoes, cubed
- enough garlic cloves, shorn
- 1 red bell pepper, dissected
- 1 yellow onion, rent asunder
- 1 serrano that you happened to have laying around, cut into pieces
3. add enough water to cover everything.
4. seal jar (π¦πΊ) and leave it in a place out of direct sunlight.
5. let ferment for around 2 weeks, opening the jar every other day or so to release pressure. otherwise it will explode and kill everyone. (or you could use one of those special fermentation lids that vents it for you)
6. strain out the solids and blend 'em up with 1 cup of the fermentation liquid.
7. add white wine vinegar or apple cider vinegar to taste, about 1-2 cups.
