This hearty beef stew is great for a cozy dinner, especially on cold nights. Since it doesn't contain gluten or dairy, it can be eaten by people with a variety of dietary restrictions.
Ingredients: 1 1/2 lbs beef stew meat, cubed. 3 medium potatoes, diced. 3 carrots, sliced. 1 onion, chopped. 3 cloves garlic, minced. 4 cups beef broth. 2 tablespoons tomato paste. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 bay leaf. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add beef cubes and brown them on all sides. Add onions and garlic, saut until softened. Stir in tomato paste, thyme, rosemary, bay leaf, salt, and pepper. Pour in beef broth, bring to a boil. Reduce heat to low, cover, and simmer for 1 hour. Add potatoes and carrots, simmer for an additional 30 minutes or until vegetables are tender. Adjust seasoning if needed. Serve hot.
