These farm-fresh sushi rolls are full of bright flavors and colors. They are a tasty take on traditional sushi because they are full of different fresh vegetables and herbs. It's great for a quick and healthy meal or as an appetizer for any event.
Ingredients: 2 cups sushi rice. 2 1/2 cups water. 1/4 cup rice vinegar. 2 tablespoons sugar. 1 teaspoon salt. 4 nori seaweed sheets. Assorted fresh vegetables carrots, cucumbers, bell peppers. Assorted fresh herbs cilantro, mint, basil. Soy sauce for dipping.
Instructions: Rinse sushi rice under cold water until water runs clear. In a saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer cooked rice to a large bowl and gently fold in vinegar mixture until well combined. Allow rice to cool to room temperature. Place a nori sheet shiny side down on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top edge. Arrange sliced vegetables and herbs in a line across the center of the rice. Roll up the sushi tightly using the bamboo mat, moistening the top edge of the nori with water to seal. Slice the roll into bite-sized pieces using a sharp knife. Serve with soy sauce for dipping.
