Ingredients: 1 1/2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup vegan butter, softened. 3/4 cup brown sugar. 1/4 cup granulated sugar. 1/2 cup unsweetened applesauce. 1 teaspoon vanilla extract. 1/4 teaspoon almond extract. 1/2 cup dried cranberries, chopped. 1/4 cup vegan white chocolate chips. 1/4 cup chopped walnuts. 1/4 cup vegan cream cheese, softened. 1 1/2 cups powdered sugar. 2 tablespoons almond milk. 1/2 teaspoon vanilla extract. 1/4 cup dried cranberries, for topping. 1/4 cup vegan white chocolate chips, melted, for drizzling.
Instructions: Warm the oven up to 175F 350C. Prepare a 9x13-inch baking dish by greasing it. Mix flour, baking powder, and salt together in a bowl with a whisk. Mix vegan butter, brown sugar, and granulated sugar in a different bowl until the mixture is light and fluffy. Add the vanilla extract, almond extract, and applesauce and mix well. Add the dry ingredients to the wet ones little by little until a dough forms. Nuts, cranberries, and vegan white chocolate chips should all be mixed in. Evenly press the dough into the baking pan that has been prepared. Bake for 18 to 20 minutes, or until the edges are lightly golden brown. Let the bars cool all the way down on a wire rack in the pan. Mix the frosting at the same time by beating vegan cream cheese, powdered sugar, almond milk, and vanilla extract together until the mixture is smooth. Sprinkle dried cranberries on top of the bars after they have cooled. Put vegan white chocolate that has been melted on top. Put the cake in the fridge for about 30 minutes to let the frosting set. Then, cut it into squares. Serve and have fun!
