I was very little the last only time I had gator and yeah the old joke "it tastes like chicken" does apply but the texture is different can't say how just that it was different enough I did not want more.
Also their fat is not good for cooking why idk just isn't.
**confit isn't just a fancy french menu item it's an old way of preserving meat in fat with sealed crockery and also a way of cooking salt cured meat into something tender
PS wild boars can swim as well as feral hogs and they can interbreed irl so who's to say during some period of strife somebody's pigs got loose now there's razorbacks in Westeros....
Collared peccaries are known to live in wetlands sometimes and they're a cousin to boars sorta as suines.
