This traditional New Year's pasta dish is a hearty and comforting meal that's perfect for celebrating the start of a new year or any time of the year. The combination of crispy pancetta, sweet peas, and savory Parmesan cheese creates a flavorful and satisfying dish that will leave everyone at the table wanting more.
Ingredients: 300g pasta of your choice. 1 tablespoon olive oil. 2 cloves garlic, minced. 200g pancetta, diced. 1 cup peas. 1/2 cup grated Parmesan cheese. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Cook pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add diced pancetta to the skillet and cook until browned and crispy, about 5 minutes. Add cooked pasta and peas to the skillet, tossing to combine with the pancetta and garlic. Stir in grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
