Ingredients: 2 boneless, skinless chicken breasts, cut into thin strips. 2 tablespoons olive oil. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 small onion, thinly sliced. 3 cloves garlic, minced. 1/2 cup chicken broth. 1/2 cup heavy cream. 2 tablespoons lemon juice. 1 teaspoon lemon zest. 1 teaspoon dried thyme. Salt and pepper to taste. Cooked rice or noodles for serving. Fresh parsley for garnish optional.
Instructions: In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips and cook until they are no longer pink, about 5 minutes. Remove them from the skillet and set aside. In the same skillet, add the sliced red and yellow bell peppers, and the onion. Saut for about 3-4 minutes, or until the vegetables start to soften.
