A hearty and tasty Cuban dish made with black beans and rice that is cooked to perfection in a pressure cooker.
Ingredients: 1 cup black beans, dried. 4 cups water. 1 tablespoon olive oil. 1 onion, chopped. 1 bell pepper, chopped. 3 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon oregano. 1 bay leaf. 1 cup long-grain white rice. 2 cups vegetable broth. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Rinse the black beans and place them in the pressure cooker with 4 cups of water. Cook on high pressure for 25 minutes, then release the pressure naturally for 10 minutes before quick releasing the remaining pressure. In a separate pan, saut the onion, bell pepper, and garlic in olive oil until softened. Add the sauted vegetables to the pressure cooker along with cumin, oregano, bay leaf, rice, and vegetable broth. Seal the pressure cooker and cook on high pressure for an additional 10 minutes, then quick release the pressure. Season with salt and pepper to taste, and garnish with fresh cilantro before serving.
