I’m appplying to a job I really want, and, every time I tell a truth about myself in the cover letter, it feels like a lie. Does my mother love me?
That's a good question and I really wish I knew the answer.
The short answer is: there isn't a straightforward answer, but there's a variety of style, and for that you'll want to ask some hiring managers.
For most entry-level jobs it really doesn't matter if you lie about your book knowledge, because the interviewer doesn't really care about it. The only time it might matter is if you're applying to replace someone who didn't really prefer working with their subject but got a job anyway, or were just hired because that other person really liked having you (as, for example, happens with computer programmers).
(I haven't actually applied for any such jobs)
