This is my personal recipe for a very moist boozy tropical bundt cake. Sharing this cake with friends promotes luck and longevity of friendship. As summer winds down, I wanted to share this recipe with the lovely people of Witchblr so you all have a chance to bake it during it’s perfect season!
*This recipe uses alcohol for soaking, you can substitute with extra pineapple and lemon juice or strawberry juice.
Ingredients
1/2 cup softened butter or vegan substitute. (I always use vegan sub)
1/2 cup light brown sugar.
1/2 cup white sugar.
3 large eggs room temperature.
1 Tablespoon of pure vanilla extract.
1 8 ounce can of crushed or chunk pineapple in 100% juice.
*1 cup buttermilk or to make vegan combine a little under a cup of Oat milk with 1/4 cup lemon juice and let sit for 10 minutes to curdle.
* If using buttermilk add 1/4 cup lemon juice to liquids.
3 cups all purpose flour.
1 Tablespoon baking powder.
1 Tablespoon baking soda.
1/2 Teaspoon salt.
1 Teaspoon ground ginger.
For soaking and serving
100% Natural local honey for drizzling.
A tablespoon lemon juice.
(optional) A few shots of complimentary alcohol ( I am fond of using Strawberry Pineapple Vodka. Flavored rum would work well too.)
If not using alcohol try using fruit juice!
Whipped cream.
Optional, add lemon zest!
Baking the cake
Remember when doing any kind of crafting in magic it’s important to focus on your intent. If you aren’t in a positive frame of mind, it’s best to save this cake for another day.
Saying your intentions out loud may have stronger effect. Fill that cake with magic and love!!!
Step 1 - Throw on some music that makes you happy!!! (totally optional)
Step 2 - PreHeat oven to 350 degrees fahrenheit and don’t forget to grease your bundt pan!
Beat sugar, eggs and vanilla well with a stand or hand mixer until well combined. Add butter and whip for a few minutes. Pour buttermilk, Lemon juice (if needed) and 8oz of crushed or chunk pineapple to the bowl. Mix until just combined.
In a separate bowl, combine the flour, baking powder, baking soda, ginger and salt. Whisk together well, sifting if necessary.
Is your bundt pan greased?
Good! I’m so proud of you for remembering! Make sure that oven is preheated too!! When we combine these mixtures this cake is going straight in the oven!
In a large bowl combine the liquid and dry ingredients until just combined.
Pour carefully into your greased bundt pan, scraping the sides of the bowl with a silicone spatula to get all that good batter up! Think of the new happy memories you’ll soon be making with your friends when you share this cake.
Pop that baby straight in the oven!!
Place cake on a middle rack and turn the cake if you open the oven to check it. Bake for 45 minutes or until a toothpick comes out almost clean. If the top of your cake starts to burn cover it with tin foil. I have not encountered this issue but every oven is different.
When the cake is cooled and removed from the pan, gather your soaking liquids. Poke a few small holes in the top of the cake. slowly and evenly pour your liquids over the cake. Do not drown your cake please!! If it starts to pool too much at the bottom hold off. You can always add more liquid later.
Coat the cake with a thin layer of drizzled honey. This cake soaks up that honey! So don’t be afraid to be a little heavy handed.
Enjoy with beloved friends
Serve with whipped cream and let the good times roll.
