Ingredients: 2 cucumbers, thinly sliced. 1/2 red onion, thinly sliced. 1/4 cup rice vinegar. 1/4 cup water. 2 tablespoons sugar. 1 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon red pepper flakes optional. 2 tablespoons fresh dill, chopped. 1 tablespoon olive oil.
Instructions: In a small saucepan, combine the rice vinegar, water, sugar, salt, and red pepper flakes if using. Heat the mixture over medium heat, stirring until the sugar and salt dissolve. Remove from heat and let it cool to room temperature. Place the sliced cucumbers and red onion in a bowl. Pour the cooled vinegar mixture over them.
