With lots of garlic butter and parmesan cheese, these crispy smashed potatoes are a tasty and filling side dish.
Ingredients: 1.5 lbs baby potatoes. 4 cloves garlic, minced. 4 tbsp butter, melted. 1/4 cup grated parmesan cheese. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Preheat oven to 425F 220C. Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain the potatoes and let them cool slightly. Place the potatoes on a baking sheet and gently smash each one with a fork or potato masher. In a small bowl, mix together the minced garlic and melted butter. Brush each smashed potato with the garlic butter mixture. Sprinkle grated parmesan cheese over the potatoes, then season with salt and pepper. Bake in the preheated oven for 20-25 minutes, or until the potatoes are crispy and golden brown. Garnish with chopped parsley before serving.
