Ingredients: 1 cup couscous. 1 1/4 cups vegetable broth. 1/2 cup diced bell peppers. 1/2 cup diced zucchini. 1/2 cup diced carrots. 1/4 cup diced onions. 2 cloves garlic, minced. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1 egg, beaten. Salt and pepper to taste. Olive oil for frying.
Instructions: In a saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork. In a separate pan, saut the diced vegetables and minced garlic in olive oil until they are tender. Combine the cooked couscous, sauted vegetables, breadcrumbs, Parmesan cheese, beaten egg, salt, and pepper in a large bowl. Mix well. Shape the mixture into small patties or croquettes. Heat olive oil in a frying pan over medium heat. Fry the couscous and vegetable croquettes until they are golden brown on both sides, about 3-4 minutes per side.
