This easy crock pot beef roast is flavorful and tender, perfect for a comforting meal any day of the week. The slow cooker does all the work, making it a convenient option for busy days.
Ingredients: 1 beef chuck roast. 1 packet dry onion soup mix. 1 cup beef broth. 1/2 cup red wine optional. 1/4 cup soy sauce. 4 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 teaspoon dried parsley. Salt and pepper to taste. 2 tablespoons cornstarch optional, for thickening gravy.
Instructions: Put the beef roast in the crock pot. Put garlic, thyme, rosemary, parsley, salt, and pepper in a bowl. Add onion soup mix and stir in the beef broth, red wine, soy sauce, and more. Spread the mix on top of the beef roast. There should be no leaks. Cook on low for 8 hours or high for 4 hours, until the beef is soft. You can make a slurry of cornstarch and water and add it to the slow cooker during the last 30 minutes of cooking to thicken the gravy if you want to. Put gravy on top of the beef roast.
