Hungarian Goulash A 1.75 lbs. boneless beef chuck 2 T. vegetable oil 2 onions, roughly chopped 1/2 t. cayenne 1 t. salt, divided, plus more for the beef 1 t. black pepper, plus more for the beef 1 t. ground caraway seeds 1 t. dried marjoram 1 t. dried thyme 2 T. paprika, preferably Hungarian 3 cups beef broth, divided 1/4 cup tomato paste 1 14 oz. can diced tomatoes, drained 1 t. sugar 2 t. minced garlic 2 T. balsamic vinegar 1 bay leaf 2 medium carrots 2 medium potatoes Cooked and buttered egg noodles, for serving Sour cream, for garnish Cut the beef into bite-sized pieces and season with salt and pepper. Sear in a skillet in the vegetable oil over medium-high heat, working in batches. Transfer to your crock pot. Sauté the onions in the skillet with 1/2 t. salt for 5-6 minutes. Add to the crock pot. In the skillet over medium heat, toast the cayenne, thyme, caraway, marjoram, black pepper, and paprika until fragrant, about two minutes. Deglaze with 1 cup of the beef broth. Add in the tomato paste, stirring to dissolve. Transfer the mixture into your crock pot. Add in the remaining beef broth, diced tomatoes, 1/2 t. salt, sugar, garlic, balsamic vinegar, and bay leaf. Peel the carrots and potatoes, cut them into chunky pieces, and add them in. Give everything a good stir. Cover and cook on Low for 8 hours or on High for 4 hours. (1.81 kg) boneless pork chops 1 cup (8 oz. or 226.8 g) beef or chicken broth 1 t. Worcestershire sauce Cornstarch (corn flour), to thicken as you wish 1/2 cup (4 oz. or 113.4 g) sour cream Cooked rice, pasta, or mashed potatoes Spray the inside of a crock pot with non-stick spray. Sauté the onions in 1 T. butter in a skillet over medium-high heat until softened. Add them to crock pot. Season the pork chops on both sides with salt and pepper. Sear them in the skillet in the remaining butter until browned. Place them in the crock pot. Deglaze the skillet with the broth, scraping up all the brown bits from the bottom. Pour the broth over the contents of the crock pot. Add the Worcestershire sauce. Cover and cook on Low for 6 hours. When the pork is done, remove it from the crock pot. Stir the cornstarch into the broth and let thicken slightly before stirring in the sour cream. Return the pork to the crock pot to coat it in the sauce and heat through as needed. I have a secret. 🤫 I really don’t love cooking meals with my crock pot. There’s just something about the flavor; everything ends up tasting pretty much the same to me. We have a ton of roasts in our freezer and tonight I cooked two of them in the crock pot. I seasoned and seared all sides of the roasts before I cooked them, as well as the veggies. Not saying that this was a bad dinner, but it’s pretty sad that I loved the salad more than the main part of this dish! Am I doing something wrong? Tonight's dinner: Crock pot chicken tikka masala As someone who uses her crock pot year-round, in summer to avoid a hot kitchen and in winter to have cozy, easily-made meals, I have to say this was one of THE most delicious dishes to ever come out of it. Tender chicken, onion, and tomatoes flavored with garlic, ginger, and a blend of spices that have a nice kick to them even someone who's a wimp when it comes to heat like me can appreciate (and tolerate). If you want to bring the curry house into YOUR house, make this dish. You'll love it. I'm already fantasizing about the leftovers. Chicken Tikka Masala 2 lbs. boneless, skinless chicken breasts 1/3 cup plain Greek yogurt 1/2 t. coriander Salt and pepper, to taste 1 onion 2 1/2 t. minced garlic 1 T. ginger 1/2 t. turmeric 1/2 t. cayenne 2 t. cumin 2 t. paprika 2 t. garam masala 1 28 oz. can crushed tomatoes 1/2 cup heavy cream Cube the chicken breasts. Combine them in the bowl of the crock pot with the yogurt, coriander, and salt and pepper. Let marinade for 15 minutes. Chop the onion. Stir it, the garlic, ginger, and spices into the crock pot. Add the tomatoes. Cover and cook on High for 4 hours or on Low for 8 hours, until the chicken is cooked through.
