The buttery crumb crust, sweet raspberry jam, and fresh raspberries in these Raspberry Crumb Bars make them taste great. They're simple to make and great for a quick snack or dessert!
Ingredients: 1 cup all-purpose flour. 1/4 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1 large egg. 1/2 tsp vanilla extract. 3/4 cup raspberry jam or preserves. 1/2 cup fresh raspberries.
Instructions: Preheat oven to 350F 175C. Grease a 9x9 inch baking pan. In a small bowl, whisk together flour, baking powder, and salt. In a separate large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract until well combined. Gradually add the flour mixture to the wet ingredients, mixing until crumbly. Press half of the mixture into the bottom of the prepared pan. Spread raspberry jam evenly over the crust. Sprinkle fresh raspberries over the jam layer. Crumble the remaining dough over the raspberry layer. Bake in preheated oven for 35-40 minutes, or until the top is golden brown. Allow to cool completely before cutting into bars.
