This Easy Fig and Melon Salad has just the right amount of sweet and savory. Fresh figs, cantaloupe that's been ripe, and arugula go well with crumbled feta cheese and crunchy walnuts. A simple but classy salad that you can make in minutes!
Ingredients: 2 cups fresh arugula. 1 cup fresh figs, quartered. 1 cup ripe cantaloupe, cubed. 1/2 cup crumbled feta cheese. 1/4 cup chopped walnuts. 2 tablespoons extra-virgin olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Put the fresh arugula, quartered figs, and cubed cantaloupe in a large salad bowl. Add the crumbled feta cheese and chopped walnuts on top of the salad. To make the dressing, mix the extra-virgin olive oil and balsamic vinegar in a small bowl with a whisk. Put the dressing on top of the salad. Add salt and pepper to the salad as needed. Gently toss everything together to mix the ingredients and spread the dressing out evenly. Serve right away as a tasty and refreshing salad!
