Just made a batch of some of the crispiest chicken I’ve ever made. Chopped chicken breasts into chunks. Set aside. Put flour and potato starch in bowl. Added salt, pepper, hot paprika, rosemary & thyme and mixes well. Crushed a bag of Lay’s potato chips. Dipped chix in flour mix, then egg wash, then potato chips. Put in freezer for about 20 minutes. Then friend on medium high for about 4 minutes each batch. Turned heat up to high and then put chicken back in for a minute or so. Holy crunchiness, Batman!!! So crunchy.
