❤️PERFECT Red Velvet Cupcakes❤️
Red velvet is my ALL-TIME FAVORITE flavor and this is my best recipe to the BEST and the PERFECT cupcakes 🍰
Ingredients:
Cupcakes: 1 ¼ cups plain flour ¼ tsp baking powder ¼ tsp salt 1 Tbsp cocoa powder 60 g unsalted butter (at room temperature) ¾ cup white sugar 1 egg ½ tsp vanilla extract (or 1 tsp vanilla essence) ½ cup buttermilk 1 Tbsp red food colouring ½ tsp white vinegar ½ tsp baking soda Cream cheese frosting: 225 g cream cheese (at room temperature) ½ tsp vanilla extract (or 1 tsp vanilla essence) ½ cup icing sugar (sifted) ¾ cup cream
Method:
1. Preheat oven to 180⁰C fan bake, and line 12 muffin tins with cupcake liners. In a big bowl sift together the flour, salt, baking powder and cocoa. Combine with a whisk or wooden spoon. 2. In a mixer cream the butter and whit sugar. Add the vanilla extract and the egg and beat until fluffy. 3. In a separate dish blend together the buttermilk and the meals colouring. Alternately (in thirds) add the dry mixture and the buttermilk combination to the creamed combination.
4. Scrape the perimeters of the bowl after each addition to make certain all ingredients are properly combined. Mix well. 5. Remove mixing bowl from machine and use a rubber spatula or wooden spoon to mix with.
6. Add the baking soda to the vinegar and stir fast to dissolve the baking soda. While still frothing, pour the vinegar mixture into your batter and blend the liquid quickly with your spare hand. 7. Spoon the batter into the prepared cupcake liners. Wipe the edges of the batter to remove any splatter on the rim, and bake for 18-20 mins or until a skewer comes out smooth whilst inserted into the center of a cupcake. 8. Cool the cupcakes inside the tray for 10 minutes before placing it in the fridge for an additional 10 minutes. 9. When cool, ice with cream cheese frosting and enjoy!💞
Frosting:
1. In a mixer mix the cream cheese, icing sugar and vanilla extract. Whip the cream in a separate bowl.
2. Fold the whipped cream into the cream cheese until the frosting is thick and creamy. 3. Spread on the cooled cupcakes, or pipe the frosting in swirls using a piping bag or a plastic bag with a corner cut.
4. Don’t forget to add sprinkles!😋
