Ingredients: 1 cup yellow lentils, rinsed. 1 onion, finely chopped. 2 tomatoes, diced. 3 cloves garlic, minced. 1 teaspoon ginger, grated. 1 teaspoon turmeric powder. 1 teaspoon cumin powder. 1 teaspoon coriander powder. 1/2 teaspoon chili powder. 4 cups vegetable broth. 1 cup spinach, chopped. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish.
Instructions: Put the Instant Pot in saut mode and heat the olive oil. Cut up some onions, garlic, and ginger and add them. Cook the onions until they become clear. Add the chili powder, cumin, coriander, and turmeric and mix them in. Just a minute or two. Put in the tomatoes, lentils, vegetable broth, salt, and pepper. Combine well. Put the lid back on the Instant Pot and set it to high pressure. Cook for 8 minutes. After you're done, let the pressure drop naturally for 5 minutes and then quickly release it. Add the chopped spinach to the hot soup and let it wilt. If necessary, change the seasoning. Serve hot with fresh cilantro on top. Enjoy your tasty and healthy Instant Pot Dal Soup!
