a typical Austrian/German dessert! 😋 Super soft and fluffy, crispy bottom, filled with a fruity jam (usually plum jam) and topped with a sweet vanilla sauce..ahhh!
Klassische Germknödel mit Vanillesoße selber machen: Lockerer Hefeteig, fruchtige Füllung, cremige Soße mit unwiderstehlichem Mohntopping.

Based on dampfnudeln recipe in that f*ck homophobic relatives recipe post, and internet recipes, and me doubling and ignoring recipes and just Making A Bread Thing. Making this mainly for me.

Dough Ingredients
1 and a 1/2 cups milk
3 teaspoons brown sugar
2 tablespoons yeast
60 grams of butter, melted
Sprinkling of salt
680 grams flour
100 grams sugar
2 large eggs
A few drops of vanilla essence

Measure out milk in measuring jug. Add brown sugar.
Microwave the milk until warm.
Sprinkle 2 tablespoons of yeast over the milk and mix it in with a teaspoon.
Set the milk aside.
Weigh out butter into a microwaveable mug and microwave until melted. Set aside.
Salt, flour, sugar into a large mixing bowl.
Make a hole/well in the flour and crack the eggs into it. Add a few drops of vanilla essence to it.
Milk should be foamy and ready now. Add to the flour.
Mix the stuff in the bowl roughly.
Add the butter to the bowl.
Knead until thoroughly mixed into a sticky dough. Cover with teatowel and plate and leave for 20 minutes.
Wash hands.
Oven to 200 C
1/2 cup milk, 60 grams butter, 30 grams sugar in the measuring jug. Microwave until butter melted, mix with spoon, put in bottom of oven dish. (Only deep ones. Don't use a shallow dish.)
Make handfuls of dough into balls and arrange in dish/es.
Cover dishes with tinfoil.
Put in oven for 20-25min.
Strong yeast flavor. Soft. Bottom where has been in the milk tastes Best. Cannot be bothered to make vanilla sauce, which sweet dampfnudeln are usually served with.
Do Not use a shallow dish. It will overflow and drip on the bottom of your oven and burn and make your house stink and you will have to clean it when the oven has cooled.
Dampfnudelns as the 41st bake from the 2016 Great British Bakeoff cookbook. The dough is simple to make. After the unusual cooking method, it has a unuique milky lemony flavor with a soft, but cooked through texture. The plum sauce is a bit tart, it compensates the dish very well with the vanilla sauce.
