Dark Chocolate Cinnamon Mousse with Mango
Are you looking for an irresistible dessert? And for a dessert, that is super healthy and nutrient-dense at the same time?
Here you go! Combine the iron, copper, and magnesium of dark chocolate with the mango’s high levels of fibre and vitamin A.
I recommend a dark vegan chocolate between 65% and 75%. Be aware that higher amounts of cocoa can contain more acidity that is multiplied by the bananas in this recipe.
You will get a big bowl of mousse (it won’t survive for a long time....) and the mango is sufficient for 4-5 portions):
250 g high-quality dark chocolate (quality matters!)
1 can of coconut milk (400 ml)
3 small or medium-sized ripe bananas (or 2 large ripe bananas)
1 teaspoon cinnamon (organic if possible)
1 large mango or 2 small mangos
Prepare a bain-marie and melt the chocolate. Set aside.
Blend the coconut milk with the bananas and the cinnamon until smooth. Add the melted chocolate and mix well.
Then, put the liquid mousse in a bowl. Cover it with a table and let it get firm in the fridge (it will take a few hours).
Peel the mango, and cut it into two halves. Cut one half into pieces (2-3 for each portion). Blend the rest of the mango with the lemon juice until smooth.
Prepare the plates with puree, 1-2 scoops of mousse, and the mango pieces.
Decoration ideas: cinnamon powder, raw chocolate powder, and wild mango vinegar.
