自分が飲みたいコーヒーを手に入れるには、自分の好みに合うロースターさんを探すのがいい。覚えておきたいのは、ロースターさん本人にもコーヒーの好みがあるし、小売や卸しで相手にしている常連客の好みに合わせた焙煎をしているということ。だから、いろいろ注文をつけても意味がない。自分の好みをよく理解して、どこで買うかは自分で選ぶ必要がある。

注目すべきは焙煎度。中浅～中煎りが好きならば、COEの豆を扱っている店がいいだろう。深すぎない焙煎でフルーティで明るく華やかなカップをめざしているはず。中深～深煎りが好きならば、ケニアはやっぱりフレンチローストだとか、コーヒーを赤ワインに例えた話をよくしているロースターさんがおすすめ。深めの焙煎でも煙を被らないように工夫した、おいしい深煎りコーヒーが飲めるはず。
