I celebrated finals day four being done by treating myself to a long walk with a latte and a date square at the end. It was so nice to just sit in the cafe and watch the sun guild the building in honeyed light.
I have today to Monday off for Easter, and then I finish and pass in my final assignments on Monday/Tuesday. Wish me luck!
Date Square with Cranberry Coulis

Date Squares (Matrimonial Cake)
Filling Ingredients: 1 lb Dates 1½ cup Water ½ cup Brown sugar -Cook until thick -Cool before spreading Base/Topping Ingredients: ¾ cup Butter 1 cup Brown sugar 1 tsp Baking soda 2 cup Rolled oats 1 tsp Baking powder 2 cup Flour ½ cup Salt -Preheat oven to 350°F -Cream together butter and sugar -Add flour, oats, salt, baking powder, and baking soda -Blend well and divide mixture in half -Spread half of mixture on bottom of a greased 9x13 pan -Top with filling -Place remaining mixture on top -Bake for aprox 30 minutes -Cool before slicing
