Hmm, that surprises me a bit to hear! :o I haven’t really talked about Stardew Valley, except to advertise a Humble Bundle with it in it and once to jokingly lament that they released “indie Harvest Moon, but with more features, and also you don’t have to be straight” before we could, hah.
BUT! To answer your question re: differences, Wishbone is much more character-oriented and plot-oriented. I still haven’t played Stardew Valley myself, but from what I’ve heard about it, it--like Harvest Moon--has fairly basic characters, opting to focus on item collection and farm upgrades and such rather than character development and plot. With Wishbone, the characters are one of the most important parts of the game, and--I expect--are what people will most remember about it. The main plot filled with cowboy drama aside... even minor NPCs like the Saloon owners, the guy behind the counter at the Bank, and the carpenter who builds your farm upgrades have backstories and secrets to discover.
In terms of gameplay, I’m not 100% sure what the biggest differences are, since I still haven’t played Stardew Valley and both it and Wishbone draw heavily from Harvest Moon-style farming and foraging mechanics. Wishbone does have a lot of minigames, though, and I don’t... thiiiink? Stardew Valley does? Wishbone also doesn’t have a limited inventory, so you don’t have to juggle stuff in and out of storage and are free to carry around 99 Bookcases at all times if your heart desires. You also have a health bar that will get depleted by bears and outlaws if you’re not careful when you’re hunting out in the wilderness.
Also... this game has cowboys in it. :)
