If I play a creature for its Blitz cost, and have a Sundial of the Infinite, I assume I'm correct that I can wait for the delayed sacrifice trigger to go on the stack during my turn and then end the turn and keep the creature. Is this a situation where the ability will trigger again during the next end step, or because it's already triggered it won't trigger anymore? And am I also safe in assuming because of the way it's worded that Blitzed creature will always draw a card when it dies?

There's only ever one sacrifice trigger for a creature that's cast for its Blitz cost, and once it's been put on the stack it can't trigger again, so ending your turn once it's there will spare your blitzers.
You have to wait until your end step, though, or the trigger won't have happened yet and will just happen on the next player's end step.
They'll keep the haste and card draw triggers for as long as they remain on the battlefield, though.
