These Sweet Pulled Pork Waffle Sliders are a delightful combination of tender pulled pork with a hint of sweetness from applesauce and honey, sandwiched between crispy sweet potato waffles. They make for a perfect Paleo-friendly treat that's both delicious and satisfying.
Ingredients: 2 lbs pork shoulder, boneless. 1/2 cup unsweetened applesauce. 1/4 cup coconut aminos. 1/4 cup honey. 2 cloves garlic, minced. 1 tsp ground ginger. 1/2 tsp salt. 1/4 tsp black pepper. 2 large sweet potatoes, peeled and grated. 2 eggs. 2 tbsp coconut flour. 1/2 tsp cinnamon. 1/4 tsp nutmeg. 1/4 tsp baking powder. Coconut oil, for cooking.
Instructions: Pork shoulder, applesauce, coconut aminos, honey, garlic, ground ginger, salt, and black pepper should all be combined in a slow cooker. Simmer the pork for eight hours on low heat, or until it is fork-tender. After the pork is cooked, thoroughly combine it with the cooking juices by shredding it using two forks. Make the sweet potato waffles while the pork is cooking. Grated sweet potatoes, eggs, coconut flour, nutmeg, cinnamon, and baking powder should all be combined in a big bowl. Blend until thoroughly blended. Waffle irons should be heated and lightly coated with coconut oil. Once the waffles are golden brown and crispy, scoop the sweet potato mixture onto the waffle iron and cook.
