Ingredients: 1 cup all-purpose flour. 2 eggs. 1/2 cup milk. 1/2 cup water. 2 tablespoons melted butter. 1/4 teaspoon salt. 2 apples, peeled, cored, and thinly sliced. 1/4 cup granulated sugar. 1/4 cup brown sugar. 1/4 cup heavy cream. 1/2 teaspoon vanilla extract. 1/4 teaspoon ground cinnamon. Whipped cream optional. Caramel sauce optional. Powdered sugar optional.
Instructions: In a blender, combine the flour, eggs, milk, water, melted butter, and salt. Blend until smooth. Let the batter rest for 30 minutes. Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour a small amount of crepe batter into the skillet, swirling it around to coat the bottom evenly. Cook for about 1-2 minutes or until the edges start to lift and the bottom is lightly browned. Flip the crepe and cook for another 1-2 minutes until the other side is lightly browned as well. Repeat with the remaining batter, stacking the crepes on a plate. In a separate skillet, combine the sliced apples, granulated sugar, brown sugar, heavy cream, vanilla extract, and ground cinnamon. Cook over medium heat, stirring occasionally, until the apples are tender and the sauce thickens, about 5-7 minutes. Place a spoonful of the caramel apple mixture in the center of each crepe, fold the sides over the filling, and then fold the top and bottom to form a square or rectangle shape.
