Paris Brest Early Grey Pastry Cream The basic recipes came out of Lenôtre's Desserts and Pastries I don't know if any of you thought it would be a great idea to infuse choux dough with any extra flavors or not but I had no success. I steeped lavender in the milk and added lemon zest to the mix after mixing. Then tasted none of either. I'm not really sure what happens here that makes the flavor go out. Steam?
