Indulge in a delightful Thin Mint Diet Coke Cake that's both easy to make and surprisingly lower in calories. The Diet Coke adds a unique twist to this chocolate cake, making it moist and flavorful. Crushed Thin Mint cookies add a refreshing minty crunch to every bite.
Ingredients: 1 box of chocolate cake mix. 1 12-ounce can of Diet Coke. 1/2 cup of unsweetened cocoa powder. 1/2 cup of semi-sweet chocolate chips. 1 sleeve of Thin Mint Girl Scout cookies, crushed. 1/4 cup of powdered sugar optional, for garnish. Whipped cream optional, for serving.
Instructions: Grease a 9x13-inch baking pan and preheat the oven to 350F 175C. Combine the chocolate cake mix and unsweetened cocoa powder in a sizable mixing bowl. Add the Diet Coke can and stir until thoroughly mixed. Initially bubbly, the batter will eventually become smooth. Mix half of the crushed Thin Mint cookies and the semi-sweet chocolate chips into the batter. Evenly distribute the batter after pouring it into the baking pan. A toothpick inserted in the center should come out clean after baking for 25 to 30 minutes in a preheated oven. Give the cake ten minutes or so to cool in the pan. Sprinkle the remaining crushed Thin Mint cookies over the cake while it's still warm. If desired, dust the cake with powdered sugar. If desired, top the warm Thin Mint Diet Coke Cake with a dollop of whipped cream. Savor your tasty and original chocolate cake!
