This gluten-free dill pickle chicken salad is ridiculously easy to make and tastes great. It's great for a quick and filling meal. There's no doubt that the soft chicken, sour dill pickles, and creamy dressing will make you happy.
Ingredients: 2 cups cooked chicken, diced. 1/2 cup gluten-free mayonnaise. 1/4 cup diced dill pickles. 2 tablespoons diced red onion. 1 tablespoon fresh dill, chopped. 1 tablespoon Dijon mustard. 1 teaspoon apple cider vinegar. Salt and pepper to taste. Lettuce leaves for serving optional.
Instructions: In a large bowl, combine the diced chicken, diced dill pickles, diced red onion, and chopped fresh dill. In a separate small bowl, whisk together the gluten-free mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until well combined. Pour the mayonnaise mixture over the chicken mixture and gently toss to coat all the ingredients evenly.
