Ingredients: 2 boneless, skinless chicken breasts. 8 oz penne pasta. 1/2 cup cherry tomatoes, halved. 1/2 cup fresh mozzarella balls. 1/4 cup fresh basil leaves, chopped. 1/4 cup pesto sauce. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Season chicken breasts with salt and pepper. Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side or until cooked through. Let it rest for a few minutes before slicing. Cook penne pasta according to package instructions until al dente. Drain and set aside. In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella balls, chopped basil, and pesto sauce. Toss to coat evenly. Drizzle olive oil over the grilled chicken slices.
