Tried making a wild mushroom polenta pie, which was maybe a little ambitious, since I'd never made polenta before. I've cut up the stuff that comes in a tube and baked it into fries before, but that's about it. I may or may not have done this wrong. I'm still not sure.
LEEK PIE WITHOUT EGGS This is one of my favorites. It doesn't look like much but it's delicious. It is a good idea to start boiling the leeks while the dough is in the fridge.
CRUST
75g margarine
100g wheat flour
50g wholemeal flour
1/4 tsp salt
1/4 dl milk

Mix the flours and the margarine - it is a good idea to cut the margarine into smaller pieces to make it easier. Add salt and milk.Knead the dough and let it cool in the fridge for a while ( this will make it easier to work with, but it is not necessary). Time to bring out your rolling pin and flatten that dough! Place it in an oven proof dish and sprinkle it with cheese. Bake it for 15 min at 200 degrees Celsius,
FILLING
3-4 leeks
100g ham (cut into small pieces)
3dl creme fraiche (sour cream)
1dl oatmeal
50g cheese
½ tsp salt
(you can sprinkle the pie with whole almonds if you want to add something extra to it)
Boil the leeks in salted water for 4 min. When they are done place them in a sieve and press with a spoon to remove some of the excess water (otherwise your pie crust might end up soggy). Place the leeks and the ham on the crust (after the crust have been baked for 15 min as described above). Mix the sour cream, oatmeal, cheese and salt and distribute it over the leeks and ham with a butter knife. (Add almonds if you want). Bake for ½-1 hour.
Preparation time: about 2 hours.

Oh My! Beer and Veggies Meat Pie
My, my! It takes some time to make our Oh My! Beer and Veggie Meat Pie. But with dark, rich Guinness, fresh potatoes, carrots, ground beef, and sharp cheddar cheese, this delicious pastry-topped pie might have you say, "Oh my!"
1. Cook ground beef with salt and pepper.
2. Drain grease from meat.
3. Cook onions and carrots and add cooked ground beef.
4. Add 1 bottle Guinness or another dark beer. Simmer and let beer reduce.
5. Add 8 oz of shredded sharp cheddar cheese.
6. Place meat mixture onto bottom pie crust and place a pie crust on top of meat mixture. Bake 375 until pie crusts golden brown.
Easy!
