Ingredients: 6 eggs. 1/2 cup milk. 1 cup diced bell peppers. 1 cup diced onions. 1 cup diced zucchini. 1 cup diced mushrooms. 1/2 cup grated cheese. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Preheat your oven to 350F 175C. In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper. Heat olive oil in an oven-safe skillet over medium heat. Add the diced onions, bell peppers, zucchini, and mushrooms to the skillet. Saut for about 5 minutes or until the vegetables are slightly tender. Pour the egg mixture over the sauted vegetables in the skillet. Sprinkle the grated cheese evenly over the top. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is set and the top is golden brown. Remove from the oven, let it cool slightly, then slice and serve.
