These roasted vegetable sandwiches with garlic avocado aioli are a delicious and satisfying vegan option packed with flavor and nutrients. The combination of roasted veggies, creamy avocado aioli, and hearty whole grain bread makes for a perfect lunch or dinner option.
Ingredients: 2 cups mixed vegetables e.g., bell peppers, zucchini, mushrooms, onions. 2 tablespoons olive oil. Salt and pepper to taste. 1 ripe avocado. 4 cloves roasted garlic. 1 tablespoon lemon juice. 1 tablespoon vegan mayonnaise. 8 slices whole grain bread. Handful of baby spinach or arugula leaves.
Instructions: Preheat oven to 400F 200C. Toss mixed vegetables with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer and roast for 20-25 minutes until tender and lightly browned. In a blender or food processor, combine ripe avocado, roasted garlic cloves, lemon juice, and vegan mayonnaise. Blend until smooth to make the aioli. Toast the whole grain bread slices. Spread the garlic avocado aioli generously on one side of each bread slice. Layer roasted vegetables and baby spinach or arugula leaves on half of the bread slices. Top with the remaining bread slices to form sandwiches. Cut sandwiches in half if desired and serve.
