Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsweetened cocoa powder. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 2/3 cup buttermilk. 2 large eggs. 2 tbsp unsalted butter, melted. 1 tsp vanilla extract. Vegetable oil, for frying. 1 cup semisweet chocolate chips. 2 tbsp unsalted butter. 1/4 cup whole milk. 1 cup powdered sugar. Rainbow sprinkles.
Instructions: In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, combine buttermilk, eggs, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms. Do not overmix. Turn the dough out onto a floured surface and roll it to about 1/2-inch thickness. Use a donut cutter to cut out donuts and place them on a baking sheet lined with parchment paper. Heat vegetable oil in a deep fryer or large, heavy-bottomed pot to 350F 175C. Carefully fry the donuts in batches, turning them once, until they are golden brown, about 2-3 minutes per side. Remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil. In a microwave-safe bowl, combine chocolate chips, 2 tbsp unsalted butter, and whole milk. Microwave in 20-second intervals, stirring until the chocolate is melted and the mixture is smooth. Dip each donut into the chocolate glaze, allowing excess to drip off, and return them to the parchment paper-lined baking sheet.
