Cashew, apricot and date quinoa bites are the perfect afternoon pick me up. I've made these before and this time added a few extras. Apricots and cashews give this a chewy texture. These quinoa bites are the perfect size for snacking or a quick breakfast on the go. Drizzled in chocolate and made with 7 ingredients. You will not be disappointed.
This is a healthy snack that is naturally sweetened with dates. They are delicious, keep for days in the refrigerator and are quick to make. I used to buy my steam in the bag quinoa at Target but ours doesn't carry it anymore. Yours might. Check their website or look in the frozen food section. I've been buying mine at Aldi. They come in a container with seasoning and I use that for another meal. If you want to keep these super healthy omit the chocolate. Grab this recipe and make up a batch today!
Makes 14
Ingredients
12 pitted dates
½ cup cashews
1 cup cooked quinoa
1/3 cup unsweetened coconut flakes
2-3 teaspoons water
¼ cup dark chocolate chunks
Directions
Place dates in food processor and pulse until it forms a ball. Remove from food processor and place in a medium bowl.
Add almonds and pulse until almonds are coarsely ground. Do not pulse longer to make them into a powder.
Add quinoa, coconut flakes, and dates. Pulse until combined.
Place mixture in medium bowl and a few teaspoons of water. Mix to combine and the mixture is sticky.
Using a teaspoon, scoop out mixture and form into 14 logs. Place on a plate and set aside.
Melt chocolate chunks in a microwave-safe bowl at 20-second intervals until melted. Stir after every 20 seconds to combine. Drizzle on logs and place in refrigerator ½ hour to 1 hour or until chocolate hardens.

Organic Strawberry-Banana Probiotic Breakfast Smoothie

INGREDIENTS (all ingredients are organic):
1 Medium Banana
½ cup frozen strawberries
¼ cup frozen chopped pineapple
½ cup Organic Meadows Plain Kefir
¾ cup coconut water
1 tbs of probiotic chia seeds
INSTRUCTIONS:
Add the frozen strawberries to the bottom of the blender, add banana, pineapple and chia seeds. Add the Coconut water and then kefir and blend on high speed until fully pureed. Pour into a glass and top with sliced bananas, strawberries and chia seeds.
Makes 2 servings
