A delightful fall treat, these Pumpkin Pie Spice Cake Doughnut Bites are great for sharing with loved ones or as an after-dinner snack. They have a crispy outside and a soft, cake-like inside, and they are flavored with warm pumpkin spice. A final dusting of powdered sugar is the ideal garnish.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/2 cup pumpkin puree. 1/4 cup milk. 2 tablespoons unsalted butter, melted. 1 egg. 1 teaspoon baking powder. 1/2 teaspoon pumpkin pie spice. 1/4 teaspoon salt. Vegetable oil for frying. Powdered sugar, for dusting.
Instructions: Combine the flour, baking powder, pumpkin pie spice, granulated sugar, and salt in a mixing bowl. Beat the egg in a different bowl and whisk in the milk, melted butter, and pumpkin puree. Blend until thoroughly blended. Once a smooth batter forms, pour the wet ingredients into the dry ingredients and stir. In a deep skillet or pot, heat the vegetable oil to 350F 175C. The doughnut batter should be dropped into the heated oil in spoonfuls using a tiny cookie scoop or spoon. Fry for 2 to 3 minutes on each side, or until golden brown. Take the doughnut bites out of the oil and place them on a plate covered with paper towels to drain. Dust the doughnut bites with powdered sugar while they're still warm. Enjoy and serve right away!
