Ingredients: 2 cups shredded coconut. 1/2 cup pumpkin puree. 1/2 cup chopped pecans. 1/3 cup sweetened condensed milk. 1/2 teaspoon pumpkin pie spice. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, combine the shredded coconut, pumpkin puree, chopped pecans, sweetened condensed milk, pumpkin pie spice, vanilla extract, and a pinch of salt. Stir the mixture until well combined and sticky. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, forming small mounds. Bake in the preheated oven for about 12-15 minutes, or until the edges of the macaroons are golden brown. Remove from the oven and let the macaroons cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, the macaroons are ready to be enjoyed!
