Cozy Soup

Prep Time: 15-20 min

Cook Time: 30-50 min

Serves: 6-8 people

Ingredients

1 lb ground beef or turkey

3/4 cup chopped onion

-Even if you hate onions, I promise they'll taste amazing in this

3/4 cup chopped carrots

1 tsp dried parsley

1 tsp dried basil

4 tbsp butter

3 cups chicken broth

4 cups peeled and diced potatoes

1/4 cup all purpose flour

2 cups Velveta cheese, cubed

-Alternatively, you can do 2 cups of shredded cheddar cheese instead

1 1/2 cups milk

3/4 tsp salt

1/4 tsp pepper

1/4 cup sour cream

Instructions

1. Brown ground meat in a 3-4 qtr saucepan. Once it's fully cooked, drain the meat and set it aside.

2. In the original saucepan, add 1 tbsp butter, chopped onion and carrots, dried basil, and dried parsley. Saute until all are tender.

3. Add broth, potatoes, and meat to saucepan. Bring to a boil. Reduce heat, cover with a lid, and simmer for 10-15 min until everything is tender.

4. In a separate skillet, melt remaining butter and add flour. Cook and stir for 3-5 min or until the mixture becomes bubbly. Add to soup and bring it to a boil. Cook and stir again for 2 additional minutes. Reduce heat to low.

5. Stir in the cheese, milk, salt and pepper. Cook and stir until cheese completely melts. Remove from heat and blend in sour cream. Serve.

Optional Garnishes

-Bacon bits

-Feta crumbles

-Shredded cheddar cheese

-Chives

S2 of Squid Game was actually pretty fucking good.

Also, I would die for Hyun-ju and I am so happy that the creators treated her with respect. I never would have expected a trans character to be on screen in a show like this, let alone play such an active/important role in the story. I honestly cried a lot from sheer happiness at what an amazing job they did with her character. Just-AH!!!! So good.

It saddens me that they couldn't get an actual trans actor to play her, but I understand that most trans actors wouldn't be comfortable outing themselves. Especially in the Korean entertainment industry.

That being said, I think Park Sung-hoon did a wonderful job portraying her and I can't wait to see more.
