This is high spoons due to the straining of the bones for the stock. You’ve got to be very careful. I found a few tiny pieces left over in mine. Once that’s over with, it’s easy peasy. Honestly though, it’s totally worth it. It’s my own recipe and I don’t think I’ve ever come up with something so rich and flavourful completely on my own in a long time. This will cheer your Winter Blues and warm your bones. I’m not going to leave you alone until you make it. I want to make it again, but I currently cannot find whole ducks or duck stock anywhere right now. It’s a seasonal thing and I’m sad. I want duck.

YAY! YOU’RE GONNA MAKE THE DUCK STEW! THANK YOUUUU! Here’s what you need to know!
Ingredients:
Duck stock (reserved carcass and giblets + water)
reserved duck meat, cut up
baby carrots
chick peas
butternut squash cubes
Simply Potatoes diced potatoes
Leftover duck meat from your whole duck, cut up
seasonings to taste
Directions:
Firstly, let’s get this duck stock made. Do you remember that carcass and giblets I had you save? Great! Put them in a saucepan and cover with water.
Bring it to a boil, cover, and move to the back burner
Let that simmer for a few hours.
Once it takes on a rich, brothy colour, scoop out all the bones. Make sure there aren’t any left in your stock.
Pick off any extra meat that might’ve been left. Put that back into the stock and add the rest of the ingredients.
Let that simmer until thickened and carrots are tender.
Give it a stir to check thickness. The squash should fall apart, making it richer and creamier. The chick peas will do the same.
I wanted to try out my cook+bake cast iron pot I got for christmas, here's what I used
Raw duck leg or some other nice piece of meat
onions
garlic
beet root, parsnip, stuff like that
conehead cabbage
black rice or whatever you like, lentils might be good
Fry the meat and toss in onions and garlic
Add in the rice, since if you add them to upper layers they wont cook properly
chop up the rest of the vegs and put them in. Remember salt somewhere.
Put in a few dl of water so it can simmer, again, make sure the rice are submerged
Stick it in the oven for an hour or so, depending on the meat. Duck drumsticks take a bit to cook
Turned out pretty nice except I got the rice too high up the stack so I had to give it more time after turning it over. Would add some big chunks of mild chili next time. Generally needed a bit more spice.
