What exactly is the purpose of checklist cards? Why can't people just... have the actual cards in their deck all the time?

There are a few reasons people use checklist cards:

Some people don’t play with sleeves, especially in limited (draft or sealed). In these cases you have to use a checklist card since the double-faced card doesn’t have a normal Magic card back.

Similarly, if you’re playing with card sleeves that aren’t completely opaque you have to use checklist cards so that the DFCs aren’t marked in the deck.

Playing with DFCs in your deck means that you have to take them out of their sleeves to transform them, which can be tedious and wear out both the card and the sleeves much more quickly.

It’s just easier for a lot of people. I always personally use checklist cards so I don’t have to deal with any of the above issues.

If I have Iroas out, who says "Prevent all damage to attacking creatures you control", and I announced when I was going to combat, by the time I declare Aurelia as an attacker is it too late for the defending player to try to damage her with a spell?

The last chance your opponent will have to burn Aurelia successfully will be in the beginning of combat step. Once you declare your attackers, they’re safe from damage until the current combat phase ends.

Does a spell that's still on the stack count for triggering surge? What about a spell that was countered, or a spell that fizzled after its target went away?

Once a spell has been cast by you or a teammate already this turn, you’ll be able to cast spells for their surge cost. 

The spell could still be on the stack or could have resolved or been countered. It doesn’t matter to surge, as long as the spell was cast legally.

Will a creature sacrificed by Grafted Wargear or Grafted Exoskeleton trigger Stone Haven Outfitter's card draw?

Not unless the creature still has other equipment.

Those cards only trigger once they become unattached from the creature, so the creature wasn’t equipped when it died and doesn’t trigger SHO.

general opinions: monster kid has their priorities straight. i am glad they exist. and also the fact that they try and do the right thing…they stand up to you in the genocide run because they want to stop you from hurting others?? they’re so brave??? they deserve better than this world and i am glad that they have found a role model in Papyrus

and also just being a great friend and supporter for alphys. alphys needs that kind of love and support in her life

general opinions: goat mom is kind and good but she makes it so difficult for people to figure out how to get past her. my friend accidentally killed her trying to get past her. toriel why

but!! she has strong morals, and she isn’t afraid to take action (see: leaving the throne and going to the Ruins to keep humans safe from Asgore). she really stands for what she believes in!! but she also isn’t afraid to see when she is wrong, or when she should take a different course of action. toriel is Very Strong, and Very Kind. she is great

What happens if you kill Flowey at the end of Neutral Route

Flowey doesn’t show up at which they would give you a “tutoriel” and then try to kill you.

and you get this extra dialogue from Asgore should flowey not be present
