This week’s theme for @ketocollabs is Easter Tradition! I decided to do a dish that I enjoyed so much during my childhood. I made Low Carb Capirotada. ▫️ Recipe is posted in comments and in pictures. I saw how great it came out for @mi_vida_lowcarb that got the recipe from @spin_queen_nancy ▫️ My mom introduced me to it as a little girl. For two months, every week, my mom would order a large cup of capirotada from a small restaurant across the street from our home. I would make that cup last for an entire week until it was time to buy another cup. I was the only one in my family (we are a total of 5 siblings) that liked it. The restaurant ended up closing. I have tasted others ever since and none have tasted like that one.
