Ancho Salmon with grilled peppers 14/07
Serves 1
You will need: 1 Salmon fillet, skinless 1.5 tbsp ancho seasoning (alternative below) 1/2 red pepper, sliced 1 tsp olive oil 1 tsp salt
Coat the peppers in the olive oil and salt and give it a good toss. Place at the bottom of baking dish.
Coat the salmon, all sides, in the ancho seasoning and a dash of olive oil.
Alt: a good spice blend for a dry rub if you don’t have the ancho one: cumin, cayenne chili powder, salt, pepper, paprika, coriander powder, a dash of oregano and some chili flakes for an added kick.
Place the salmon on top of the peppers. Put this all in the oven for 20 minutes at 200 degrees C.
