as of today, I have officially been a vegetarian for a week!

honestly it's been really great so far. I hate cooking but I have been able to find super easy recipes, or just eat things I would normally eat either without meat or with a meat substitute. also been eating wayyy more vegetables than I normally would!

had a mushroom & black truffle flatbread pizza for lunch and thinking about either making breakfast sandwiches (with veggie 'sausage' patties) or mBOATs (mushroom bacon, onion, avocado & tomato sandwiches) for dinner tonight
