Served between two slices of your favorite bread, this melty sandwich has roasted eggplant slices, gooey mozzarella cheese, and tangy marinara sauce.
Ingredients: 1 large eggplant, sliced. 4 slices mozzarella cheese. 4 slices bread of your choice. 2 tablespoons olive oil. 1 teaspoon Italian seasoning. Salt and pepper to taste. 1/4 cup marinara sauce.
Instructions: Get the oven ready by heating it up to 400F 200C. Brush both sides of the eggplant slices with olive oil and put them on a baking sheet. Salt and pepper should be sprinkled on top. In an oven that has already been heated, roast eggplant for 15 to 20 minutes, or until it is soft and slightly browned. Take it out of the oven and set it aside. On one side of each piece of bread, spread marinara sauce. Toast some eggplant slices and put them on top of two pieces of bread. Toast some mozzarella cheese and put it on top of the eggplant. Place the other slices of bread on top, sauce side down. Set a pan on medium heat and add a little olive oil. Start cooking the sandwiches in the pan. Each side should take about 3 to 4 minutes to turn golden brown. Enjoy while hot!
