This is one of my absolutely favorite meals.

Eggplant pizza.

I use some turkey pepperoni I found at Whole Foods and I am obsessed. It definitely helps my food cravings for pizza.

Tonight’s dinner: Eggplant pizza! Directions
-chop your eggplant into little pizza size discs 
-sprinkle coconut oil and salt onto both sides of your egg plant 
-bake in the oven at 375-400 degrees for (20 minuets) 
-when it hits 20 minuets flip your egg plant on the other side and roast for another 15 mins
-remove egg plant from oven and add pizza sauce on top of each eggplant (I used the natures promise versions because it only has 3g carbs per serving)
-lightly sprinkle Italian seasoning and basil seasoning on top
-add your cheese (I used mozzarella and a 4 cheese artisan blend)
-add your pepperoni (I used turkey pepperonis)
-bake in the oven for 10 mins! Then it is ready to eat! This came out pretty tasty since it was my first time making and eating egg plant. I sprinkled some Saracha sauce and creme cheese on top! Definitely going to be a staple meal!

El único misterio (además de tener cebolla caramelizada en el frigo) es cómo sacar la carne de la berenjena. ¡Dentro flashback! *Cortad la berenjena a la mitad, cortadla en rejilla, a un plato, tapad con film transparente y metedla al microondas a toda potencia 4 minutos y medio; Sacad la carne con una cuchara y listo. Fin del ¡flashback! ¡¡¡FLASHBACK!!! Eggplant pizza for dinner tonight. He brought in another huge harvest today so more eggplant went in the freezer but I held some out to put on the pizza. I did bread and partially bake the eggplant before it went on top of the sauce. Then some fresh mozzarella. #eggplantpizza #keto Well it's almost a year we have been on keto and I can say it has been a lifestyle change for sure. We thought it would be so hard but it's not. My body has changed so much and I feel so good. Last April is was 185 lbs. The same weight I was when I was pregnant the last time. Sad but true. I am now 125 lbs. I fluctuate between that and 130 but for me it's really how I feel. I was a 40DDD and now 36D. I have lost inches and went from a size 18...yes I said it to a now size 9. I work at home so making sure we are active and walking.
